This Bradenton restaurant violated 10 health guidelines, inspectors say

An organic Italian restaurant was among numerous Manatee eateries cited for violating health guidelines in this week’s inspections report.

Eat Organico, 4832 Cortez Road W., Bradenton

  • A cook sampled food with their bare hands, according to an inspector. The cook was advised to wash their hands and sample food using a utensil.
  • There were no gloves available in the restaurant, an inspector said. The operator was advised to handle ready to eat food with a protective barrier, such as tongs or food-grade paper.
  • Raw shrimp, raw squid, steak and other foods were cold held at temperatures greater than 41 degrees.
  • Eggplant, lasagna and veal were hot held at temperatures below 135 degrees.
  • Raw shelled eggs were stored directly over eggplant and marina, according to an inspector.
  • A stop sale was issued on burrata cheese, diced tomatoes and shredded mozzarella that was not cooled due to a power shortage error. The food was discarded.
  • The food manager lacked knowledge of which foodborne illnesses and symptoms might prevent someone from working with food.
  • The food manager’s certification had expired, according to an inspector.
  • There was no proof of required state-approved training for any employees.
  • There was no date marking on any opened commercially processed food in the establishment, an inspector said.

Mexican and American Food, 10816 U.S. 41 N., Palmetto

  • Horchata was stored at a temperature greater than 41 degrees. The operator added more ice.
  • The handwash sink was blocked by a cutting board. The issue was corrected on-site.
  • Inspectors said neither the handwash sink nor a three-compartment sink reached a temperature of 100 degrees.

SketchDaddy’s Wings ‘n Things, 7814 Cortez Road W., Bradenton

  • Beef patties were stored at temperatures greater than 41 degrees. Corrective action was taken, according to an inspector.
  • The ambient air thermometer in a reach-in cooler was off by 8 degrees. The issue was correction on-site.

Taco Bell, 3710 Cortez Road W., Bradenton

  • Hash browns were hot held at temperatures below 135 degrees, according to an inspector. The operator discarded them.
  • The inspector also said food was cold held above 41 degrees. The report did not say which foods were the cause for the citation.
  • The food manager’s certification had expired and there was not a certified food service manager on duty when the inspector arrived.
  • There was no proof of required state-approved training provided for an employee hired more than 60 days ago.

Caddy’s at the Point, 801 Riverside Dr. E., Bradenton

  • Two cooks were seen failing to wash their hands before changing gloves.
  • There was not a certified food service manager on duty as four or more employees prepared food.
  • There was no proof of require state-approved training for some employees.

Oma Pizza, 201 Gulf Dr. N., Bradenton Beach

  • Whole milk was cold held at a temperature greater than 41 degrees. The operator said the unit was open while beverages were being restocked and the unit was brought back down to an acceptable temperature.
  • The food manager’s certification had expired and there was no certified food manager on duty while four or more employees prepared food.

Fratello’s Chicago Pizzeria, 7110 Cortez Road W., Bradenton

  • Meatballs were hot held at temperatures below 135 degrees. Corrective action was taken.
  • Hot dogs and mozzarella cheese were cold held at temperatures greater than 41 degrees, according to an inspector. A stop sale was issued on the affected food.
  • There was no proof of required state-approved training for employees hired more than 60 days ago.

Beef ‘O’ Brady’s, 4925 Cortez Road W., Bradenton

  • Sliced tomatoes, guacamole and various dairy products were cold held at temperatures greater than 41 degrees. The operator was advised to refrain from storing hot food under food that is cold holding.
  • There was an accumulation of black/green mold-like substance in the ice machine, according to an inspector. Corrective action was taken.

Kiku Sushi & Grill, 7338 Cortez Road W., Bradenton

  • Raw beef was cold held at temperatures greater than 41 degrees, according to an inspector. Corrective action was taken.
  • The certified food manager lacked knowledge of which foodborne illnesses and symptoms of illness might prevent a person from working with food.
