Mofongo burrito? A Puerto Rican food truck in Palmetto is a prayer answered for owners

For Wesley Rosas, it was literally the answer to his prayers when a food truck owner decided to get out of the business and sell her food truck.

It had long been the dream of Wesley and his brother, Yamphier Rosas, to have a food truck and sell Puerto Rican food, something that can be a little hard to find in Manatee County.

Unfortunately, Yamphier died in a 2018 traffic accident at age 28 and did not live to see the dream realized.

Two years ago, Wesley and his wife, Ivannies Rosario, opened their Suavezonnn food truck business at 3824 U.S. 41 N., Palmetto, and have been serving delicious Puerto Rican dishes ever since.

You can find their bright red food truck parked in front of Gonzalez Motorsports four days a week, next to a covered outdoor picnic table seating and a water fountain.

“I love the kitchen and Wesley had the dream. We prayed, and we decided to see what would happen,” Ivannies said. “The first time tried, we received a blessing.”

Many of the dishes served by Suavezonnn are plantain-based, such as the Burrifongo, a kind of burrito with mofongo (a mashed plantain-based dish) and filled with chicken, steak or pork, or a combination of all three for $18 to $20.

Also popular are stuffed mofongo with a choice of chicken, fried pork, shrimp, steak or octopus salad for between $18 and $22.

Another favorite is the stuffed alcapurria, a fried fritter with steak and shrimp inside.

The menu is printed in English on one side and Spanish on the other, and offers appetizers, samplers, a variety of mofongos, stuffed tostones, sandwiches and sides.

Online reviewers have high praise for the food and the service.

“The food is so good. They make everything with fresh, never frozen ingredients. Great prices and amazing service. I love their empanadas,” one said.

Another wrote: “Great Puerto Rican food made fresh on site. The mofongo and chicken broth were amazing. The octopus salad is the best I have ever had —very tender not chewy. The alcapurria brought great memories of the island. Nothing beats an alcapurria and a cold Coca Cola on a hot day.”

The Suavezonnn food truck is open for business noon to 6 p.m. Wednesday and noon to 8 p.m. Thursday through Saturday.
