q 3 cups potatoes, diced
q 6 frankfurters, sliced
q 1 small onion, diced
q Dash of pepper
q 1/2 teaspoon salt
q 2 cans of Hunt’s tomato sauce
q 1/2 cup water
q 1/2 green pepper, diced
q 1/2 of red pepper, diced
n Cook potatoes in boiling water for 10 minutes then drain.
n Mix potatoes with rest of ingredients.
n Pour all into a greased baking dish.
n Bake in a 350-degree oven for 45 minutes until top is browned, and potatoes are done.
n Serves 4. Can be doubled if you wish.

Ground Beef Baked Beans
q 1 pound ground beef
q 1 medium onion, chopped
q One 14-ounce can red beans, drained
q One 14-ounce can butter beans, drained
q 1 large can baked beans, do not drain
q 1 can Manwich
q 1/4 cup ketchup
q 1/4 cup brown sugar
n Brown ground beef and onion, drain.
n Mix all other ingredients together with ground beef mixture
n Bake 350 for approximately 1 hour. This is very easy and fast preparation. You can make ahead of time and reheat.

q 2 slices of rye, marble or pumpernickel bread
q 3-4 slices corned beef or pastrami
q 1 slice of Lorriane swiss cheese
q 2 tablespoons sauerkraut
q Tortilla chips
q 1 beaten egg
q Russian dressing
n Makes 1 sandwich
n Preheat oven to 375 degrees.
n Spray cookie sheet with non-stick cooking spray.
n Crush tortilla chips in food processor (enough to coat both slices of bread on one side)
n Dip bread in beaten egg and then coat one side of each slice with crushed chips.
n Form sandwich with meat, cheese, sauerkraut and dressing.
n Place on cookie sheet and bake for 15 minutes until chips are lightly browned. They will be very hot and crispy.
n Wonderful with fresh fruit on the side.

CHINESE RESTAURANT BBQ RIBS
q 1 rack baby back pork ribs (about 2 to 3 pounds), membrane removed
q 2 teaspoons kosher salt
q 1/2 cup honey
q 1/4 cup hot Chinese chili sauce (Sriracha) or ketchup
q 1/4 cup soy sauce
q 2 tablespoons rice vinegar
q 2 garlic cloves, minced
q 1 tablespoon chopped fresh ginger
q 1 to 2 tablespoons toasted sesame seeds
n Start to finish: 1 hour 15 minutes (15 minutes active)
n Heat the oven to 350 degrees.
n Cut the ribs into sections of 1 to 3 ribs each. Arrange the ribs in a roasting pan or on a large rimmed baking sheet. Sprinkle the ribs with the salt. Set aside.
n In a small bowl, whisk together the honey, chili sauce, soy sauce, vinegar, garlic and ginger. Pour or brush the sauce over the ribs, turning them in the sauce until well coated.
n Bake the ribs, uncovered, for 1 hour, basting periodically with the pan drippings. The ribs are done when the meat is chewy-tender and starts to pull away from the bone.
n To serve, sprinkle the ribs with sesame seeds.
n Makes 2 or 3 servings.
