For the first show of its Stage III season, Florida Studio Theatre in Sarasota is producing Will Snider’s year-old drama “How to Use a Knife.”
The Stage III series highlights plays that have a little more edginess than the usual fare that FST presents. The plays may include language, themes or depictions that some people in general audiences might find objectionable. So there’s an implied caveat that goes along with all the shows in the series.
The story concerns a Wall Street restaurant run by Chef George. Two rowdy Guatemalan line cooks, a rookie busboy and a reserved African dishwasher, are among the employees. Authorities arrive, looking for a wanted man. According to FST’s publicity material, “How to Use a Knife” explores both the personal and moral questions that arise when the ugliness of the past boils over.
Previous productions have been popular with audiences and praised by critics. Reviews have called it “riveting” and have said that it “surges with non-stop energy.”
