Oil & Vinegar, T-Mobile commit to Mall at University Town Center

Culinary store, phone carrier latest additions to lineup

UNIVERSITY PARK -- A culinary store to be managed by a mother and son team has filed a building application to start work on their unit inside the Mall at University Town Center.

Oil & Vinegar filed its building application with Sarasota on Wednesday for a 1,300-square-foot space on the second level beside Macy's.

The store will be owned by Kandy Kaak and her son, Scott Palmer of Lakewood Ranch, who spoke to the Herald in February about their plans to open the store inside the mall.

Oil & Vinegar stores offer spices, pasta, ceramic ware and desserts. The main attraction is highlighted on the amphora wall, where more than 50 oils and vinegars are suspended in amphora-shaped glass against a backlit, faux stone wall.

"To me, it was a culinary gift shop -- it was no longer oil and vinegar," Palmer said in the February interview.

Oil & Vinegar was founded in 1999 in Oosterhout, Netherlands, and has 16 stores in the United States and 70 stores in nine countries.

Palmer and Kaak have franchise rights to Central Florida and Tampa Bay, reaching up to Orange County, down through Pasco, Polk, Pinellas and Hillsborough, into Manatee and Sarasota counties. The family has rights to open three locations over the next five years, with a second store to come within the second year of opening the store at the new mall.

Also, mobile phone carrier T-Mobile filed a building application for a 1,497-square-foot store Wednesday. The store will be located on the first floor beside Dillard's.

T-Mobile, the fourth place carrier in the nation, has been revamping its image and service in the last year, offering no-contract options, a new tryout period for phones, upgraded high-speed LTE data service and soon will launch a music streaming service for its subscribers.

T-Mobile also has retail stores inside DeSoto Square and at 4132 S. Tamiami Trail in Sarasota.

The Mall at UTC is set to open Oct. 16 on Cattlemen Road and University Parkway and features Apple, Crate & Barrel, H&M, Dillard's, Saks Fifth Avenue and more.
