Conveyor belt sushi coming to Mall at University Town Center by Yo! Sushi

London-based restaurant known for conveyor belt system for ordering sushi

UNIVERSITY PARK -- America's only Yo! Sushi will be opening inside the Mall at University Town Center come October.

The London-based sushi restaurant filed for a building permit application Tuesday with Sarasota County for a space inside the two-level, 880,000-square-foot mall.

The chain is known for moving its sushi and other dishes on a conveyor belt, allowing people to choose their food. Prices are based on a color-coded system, with the color of the plates matching the price of the food. Hot and cold food to order is also available.

Yo! Sushi had a location at Washington's Union Station in 2012 but that closed in March. Plans for a second location in the District of Columbia's Chinatown never panned out.

The franchised chain started in 1997 and is predominately in the United Kingdom and expanded to the Middle East. There are 76 locations in seven countries.

Yo! Sushi is adding to a collection of fast-food offerings inside the mall including Mandarin Express, Smoothie King, Starbucks, Cold Stone Creamery and Teavana. Full-service restaurants include BRIO Tuscan Grille, Cheesecake Factory, Kona Grill, Seasons 52, Sophie's (inside Saks Fifth Avenue) and Zinburger Wine & Burger Bar.

The upscale mall with retailers such as Apple, Crate & Barrel, H&M, Macy's, Dillard's and Saks Fifth Avenue is expected to open Oct. 16 on the corner of Cattlemen Road and University Parkway.
