Today's soy-based foods contain unhealthy products

I respect an individual's right to choose whatever they wish to consume. With that stated, I want to address the numerous letters sent by Eric Teiter urging us to adopt vegetarian diets. One of his recommendations included using soy products as a healthy alternative.

Due to agribusiness, this could not be further from the truth. Unless USDA organic, the seeds used in the U.S. soy crop is largely controlled by Monsanto and have been genetically modified to incorporate glyphosate. These glyphosates are estrogen mimickers and deleterious to our health.

Soy products made to resemble meat products are highly processed with the sludge of the soy bean industry.

Asians consume non-GMO fermented soy. Fermenting soy stops the effect of phytic acid, which binds and reduces assimilation of essential minerals. Soy phytoestrogens disrupt endocrine function and contain protease inhibitors.

It is important to understand the biochemistry of our bodies, how agribusiness has so polluted and corrupted our food supply, and repeated misinformation has brought us to where we are today.

Prior to factory farms, our cattle were humanly raised and fed their natural diet of grass. Grass feeding causes the animal no distress and flatulence as the grain and corn fed animals produce. Further, the meat from grass-fed animals is rich in healthy CLA's and omega 3 fatty acids; not so with grain-fed animals.

High levels of refined carbohydrates, transfats and polyunsaturated fats, which were introduced and widely used after World War II, are the main cause for our health woes today. Prior to that, consumption of quality saturated fats was much higher and obesity and heart disease were rare.

Our bodies contain high levels of saturated fat and it is needed particularly around organs and cell membranes. Children need it to ensure proper brain and neurological development.
